Cut the zucchini into slices, add salt and let it steep, then dab it off. Then fry the mixture in a little olive oil, then season. Caramelize with 1-2 teaspoons sugar. Deglaze with balsamic vinegar and cook until al dente. Place on the side in a bowl.
Do the same with the other vegetables in the same pan. Ideally, let all vegetables steep for several hours. Excess liquid can be dabbed up with a chiabatta. Close your eyes and enjoy 🙂
