Ingredients:
- 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower, bell peppers, etc.)
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, finely chopped
- 1/2 cup plain yogurt
- 1/4 cup cashews, soaked in warm water
- 1/2 cup coconut milk
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh cilantro for garnish
Instructions:
- Prepare the Cashew Paste:
- Drain the soaked cashews and blend them into a smooth paste using a little water. Set aside.
- Prep the Vegetables:
- Wash and chop the mixed vegetables into bite-sized pieces.
- Cooking the Curry:
- Heat oil or ghee in a large pan over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute until the raw aroma disappears.
- Stir in turmeric powder, coriander powder, cumin powder, and red chili powder. Cook the spices for a minute to release their flavors.
- Add tomato puree and cook until the oil starts to separate from the masala.
- Add the mixed vegetables and coat them well with the masala. Cook for 5-7 minutes, stirring occasionally.
- Prepare the Yogurt Mixture:
- In a bowl, whisk the yogurt until smooth. Gradually add the cashew paste, whisking continuously to avoid lumps.
- Pour the yogurt mixture into the pan, stirring constantly. Cook for an additional 5 minutes.
- Add Coconut Milk and Simmer:
- Pour in the coconut milk and garam masala. Season with salt according to your taste. Stir well and let it simmer on low heat for another 10-15 minutes or until the vegetables are tender.
