Ingredients:
- 2 ripe avocados
- 1 small red onion, finely diced
- 1-2 cloves garlic, minced
- 1-2 tomatoes, diced
- 1 lime, juiced
- Salt and pepper to taste
- 4 slices of whole wheat bread
- 4 eggs
- 200g firm tofu, sliced
- 2 tablespoons salted butter
Instructions:
- Prepare Guacamole:
- In a bowl, mash the ripe avocados with a fork.
- Add diced red onion, minced garlic, diced tomatoes, lime juice, salt, and pepper.
- Mix well until all ingredients are combined. Adjust salt and pepper to taste.
- Pan-Fry Tofu:
- Heat 1 tablespoon of salted butter in a pan over medium heat.
- Add sliced tofu and cook until golden brown on both sides.
- Remove from heat and set aside.
- Fried Egg Toast:
- Toast the whole wheat bread slices to your liking.
- In another pan, fry eggs to your preference (sunny-side-up or over-easy).
- Assemble:
- Spread a generous amount of guacamole on each slice of toasted whole wheat bread.
- Place a fried egg on top of each slice.
- Serve with Pan-Fried Tofu:
- Arrange the pan-fried tofu slices on the side of the guacamole and fried egg toast.
